Bechamel sauceBéchamel sauce is of Italian origin, introduced to the French court by the chefs of Catherine de Medicis in the 16th century. Some centuries later, Auguste Escoffier, classifying and modernizing haute cuisine, categorizes it as a mother sauce, strengthening its importance for French cuisine. Today, béchamel sauce adapts itself to many recipes such as the croque-monsieurs, many pastas or as a base for other sauces.

StepsPrepare a roux by mixing in ¼ cups of flour to ¼ cups of melted butter in a saucepan, then dilute it with 4 cups of boiling milk. Bring the mixture to a boil while stirring vigorously with a whisk to remove clumps. Next, add two teaspoons of salt, a pinch of pepper, and a hint of grated nutmeg. Optional: Use a clove to attach a bay leaf, some parsley leaves, and a twig of thyme to half an onion, and add this to the mixture. Boil and reduce the sauce over low heat for 25-30 minutes, stirring occasionally. Finally, pass the sauce through a sieve and refrigerate until use.

Pour adapter la recette pour le public américain, j’ai commencé par ajouter des mesures aux ingrédients, donc même les amateurs culinaires peuvent la faire. Ensuite, pour les mesures qu’il avait inclues, je les ai convertis au système impérial américain (par exemple, « 8 grammes de sel » est devenu « two teaspoons of salt »). Je reconnaissais que les herbes fraîches ne sont pas très courantes aux cuisines américaines, donc j’ai rendu cette étape optionnelle dans la traduction. Je crois que pour une sauce béchamel élémentaire, les ingrédients principaux fournissent l’essentiel de la saveur. Enfin, j’ai fait de petites modifications dans le choix de mots, comme « une terrine » à « a sieve ».

To adapt this recipe for the American public, I started by adding the measurements to ingredients so that even beginner cooks can make it. Then, I converted the measurements I included to the American imperial system (for example 8 grams of salt became two teaspoons of salt). I recognize that fresh herbs aren’t very common in American kitchens, so I made this step optional in the translation. I believe that for an elementary béchamel sauce, the main ingredients furnish the essential flavor. Finally, I made slight modifications in the word choice, such as « une terrine » to « a sieve. »

Je crois que les deux recettes sont plutôt similaires, bien que l’omission des herbes puisse soustraire une profondeur de la saveur. En fin de compte, la sauce béchamel est une recette assez simple à cuisiner et je pense que j’ai réussi à la faire, malgré de petites fautes. La préparation du roux m’a dérangé la plus : pour mon premier essai, j’ai ajouté trop de farine, alors le roux est devenu trop agglutiné. Pour mon deuxième essai, la casserole était trop chaude, alors j’ai brûlé le beurre. J’aimais le produit fini et je l’ai mangé avec un sandwich au poulet. Un seul problème avec la sauce : après l’avoir mis au frigo pendant un ou deux jours, la sauce a épaissi comme la gelée, qui est peu appétissant.

I believe that both recipes are rather similar, even though the omission of certain herbs can substract a depth of flavor. Béchamel sauce is a rather simple recipe to follow and I believe I succeeded at making it, in spite of some flaws. The preparation of the roux bothered me the most : for my first attempt, I added too much flour, so it became soggy. For my second attempt, the casserole was too hot, so I melted the butter. I liked the finish product and I ate it with a chicken sandwich. The only problem with the sauce : after putting it in the fridge for one or two days, the sauce hardened as if frozen, which is not appetizing.
